Many of you know I do try to stick to a gluten and dairy free diet but I haven’t shared that I am one of those individuals who rarely gets hungry. Yes, that’s correct, I said I rarely get hungry. Trust me, it’s not as great as it sounds. However, this week food has been one of my main focuses and thus I thought I would share some of my food for the week.
1. Cedar Plank Salmon
My food week started last Saturday at Mitchell’s Fish Market in Newport on the Levee. The salmon was perfect and came with grilled zucchini and asparagus. It was wonderful.
2. Sushi Night
Sushi has always been one of the only foods that I crave. I met a friend and her daughter for a sushi night at Miyako in Lexington. The sushi is beautiful to look at and was just as wonderful to eat.
3. Take Home Salmon
And because I haven’t had enough salmon this week – I had every intention of making lemon butter salmon at home. However, when I went to Kroger to buy salmon, I cam across already prepared salmon. All I had to do was place in the oven and it cooked in the bag. We had Bourbon Glazed and California Garlic.
4. Avocado Toast
I came across several blogs that mentioned avocado toast. This is simply one avocado mashed, mixed with olive oil and spread on toast. I’ve had it twice this week and bought more avocados at the store today.
James surprised me this week with a Godiva Chocolate Easter Bunny – it was just what I needed.
Realizing after I have written this that I certainly need to increase my workout over the weekend. However, each meal has been worth it! What have you been eating this week?
